Main origins:
Guatemala, Honduras, India, Sri Lanka
Main components:
α-terpenyl acetate, 1,8-Cineol, Linalool, Linalyl acetate, Terpinen-4-ol
Extraction:
Extracted from seeds
Crop:
Summer - Autumn
Notes
Coming from the Malabar coast, cardamom grows on a bush from the same botanical family as ginger. It is the most expensive spice in the world after saffron and vanilla. The bush is extremely sensitive to climate conditions and diseases and has a variable production, giving fruits only every two or three years. Dried seeds are either used as such in culinary applications or distilled to obtain a beautiful essence often used in masculine fragrances.

Notes
Cinnamon is the oldest known spice, coming from cinnamon Cassia and Ceylon trees, both sharing the same family and genus, but growing in different areas. While Cassia is more robust, Cinnamon Ceylon delivers a more delicate aroma: its leaves give a much sweeter and subtle clove-like essence. During ancient times,it was used not only in food but also in perfumes, creams and medicine.

Main origins:

Main components:
Eugenol, Eugenyl acetate, Caryophyllene
Extraction:
Extracted from buds, leaves, stems
Crop:
Spring - Summer - Autumn
Notes
This tropical tree was discovered on the Molucca Islands and cultivated since the early 19th century. When clove buds are about to open, they are picked and sun dried for three days during which they obtain their dark colour and particular shape. They are then either sold as a spice or processed to obtain the extract. The leaves and twigs are also extracted to confer an herbaceous tone to fragrance compounds.

Main origins:
Philippines
Main components:
Limonene, α-phellandrene, Elemol, Elemicine
Extraction:
Extracted from resin
Crop:
Spring - Summer - Autumn
Notes
Its production is essentially driven by the Philippines where the tree either grows in the wild or is cultivated. However, essential oils and resinoids are manufactured in France from imported gums. The gum is formed by tree exudation or through trunk incisions. The extract is used as a fixative and also in colognes for its freshness.

Notes
Fenugreek is a small Eurasian plant with a pod shaped flower containing mildly bitter seeds. It owes its name to the Latin foenum-graecum, meaning “Greek hay”, as it was originally used by the Greeks to give a scent to inferior hay. Dry fenugreek seeds are still used for their therapeutic virtues, and in culinary applications, while the essence, which is extracted from the seeds, gives a walnut-like and spicy aroma to several types of perfumes.

Notes
It is an herbal plant native to western Asia and cultivated for its large rhizomes that are often used fresh or dry as a spice. Although it is emblematic of Asian cooking, this spice was already used by the Romans to flavour their dishes and cure several illnesses. Ginger extracts obtained from the cleaned, peeled and dried rhizomes are popular for their tonic and stimulating virtues in flavours, and for the citrus and spicy notes they confer in luxury perfumery.

Notes
The nutmeg tree, native to the Molucca Islands, gives two spices derived from the fruit: nutmeg and mace. Nutmeg is the seed of the tree while mace is the reddish wrapping round the kernel. The oil is usually obtained from damaged nuts that are unsuitable to be sold as a spice. Nutmeg is probably the only nut that nations have fought over. Most of the Molucca Islands were under the Dutch rule during the colonial era so they could control the nutmeg production and trade.

Notes
Pepper is a liana native to the Malabar coast that starts giving fruits only after seven or eight years. The white, black or green grains correspond to the different maturation states and treatment of the fruit. Cultivated in exotic areas, black pepper is harvested before it is mature and sundried until the envelope wrinkles and turns black. During the Middle-Ages, Pepper was a means of paying back one’s debts and taxes. It is one of the most used spices in the world and its oil is also used to provide a special effect in modern quality perfumes.

Pink pepper can come from two different trees native to the Reunion island: the schinus molle and the schinus terebenthifolius. The berries, also called “bourbon pepper” or “false pepper”, turn pink when they mature. Pink Pepper has a sweet and sharp flavour very much appreciated in cooking and is often used as an alternative to Black Pepper in perfumery.
